Shelter Fried Spicy Shrimps (避風塘炒蝦)



This is a Cantonese dish originated from Hong Kong. In the past, Hong Kong has a substantial population in the typhoon shelter water home, and the famous dishes of the Chinese restaurants Typhoon Shelter Fried Crab (I used shrimps for simplicity) is from the typhoon shelter floating restaurant.

Recipes (modified)

Medium shrimps, deveined  15 pieces
Corn starch for deep frying
Garlic, minced  4 cloves
Red hot pepper 2
Green onions 2 stalks
Red onions, minced 2 tbsp
Ginger, sliced 2 slices
bread crumbs, 1/3 cup
Oil
Salt and Pepper

Directions

1) Preparation: remove seeds of red peppers and cut into small dices, cut green onions into inches, slice the ginger, mince the garlic and red onions.

2) Deveined the shrimps and cut away their heads and legs. Dry pat the shrimps with paper towel.

3) Heat up 1 inch of oil in a pan (on high heat for deep frying).  Coat the shrimps with thin layer of corn starch and load them into the oil one by one. Make sure the oil is hot enough. 

4) Remove shrimps from oil when they turned color. Takes less than 10 seconds.


5) Heat 2 tbsp of oil in another pan (wok ideally) on medium-high heat. Stir fry ginger, garlic, red onions until almost brown. Add red peppers, green onions and bread crumbs. Stir fry quickly until brown and fragrant. Then, add shrimps, and salt and pepper to taste. 


6) The dish will be just ready after adding the shrimps. Watch out, it is easy to overcook or burn the bread crumbs. 


I wish I have a legit wok that will make the dish so much better! Also, the more oil you add, the more tasty it is. Again, it is your choice of being healthy or tasty food. You will not feel the grease because bread crumbs will absorb all the oil.
